Z365" or "Festival all year round" is the new strategic point of the Festival in which converge investigation, accompaniment and development of new talents (Ikusmira Berriak, Nest); training and cinematic knowledge transfer (Elías Querejeta Zine Eskola, Zinemaldia + Plus, Filmmakers' dialogue); and investigation, disclosure and cinematic thought (Z70 project, Thought and Discussion and Research and publications).
Pablo Jesús Rivero (Rosario, Argentina) started his training at the Instituto Argentino de Gastronomía and graduated as a sommelier with the first cohort of students from the Escuela Argentina de Vinos. He specialised in raising cattle and producing beef, focused on cooking with fire. He founded La Parrilla Don Julio in 1999. In 2019 he relaunched the historical eatery El Preferido de Palermo. In 2020 he opened La Carnicería Don Julio butcher’s shop and in 2023 created Don Julio Comarca Productiva in the province of Buenos Aires, where he produces beef, vegetables and honey for his restaurants.
An advocate of the Palermo culture and a social activist, he actively supports Luna de Enfrente, the city’s first urban organic community vegetable garden, and festivities such as the Tomato Festival.
La Parrilla Don Julio ranks in position no. 10 of The World’s 50 Best Restaurants 2025; it was voted Latin America’s best restaurant in 2024 and is listed as the World’s Best Steakhouse for the third year running in the World’s 101 Best Steak Restaurants. It boasts both a Michelin star and a Michelin a green star for sustainability.
He was appointed Ambassador of the Marca País Argentina brand in 2024, named the World’s Best Sommelier in 2024 and designated Special Ambassador for Gastronomy Tourism by UN Tourism in 2024.
