Galician nouvelle cuisine has the peculiar trait of a love for exploring the past, for recovering the flavours left behind by the modern world, for lending dignity to products considered inferior. The Nove Group is an association of chefs who reach beyond the clichés to promote this cuisine of the future. Alberto Baamonde began his career more than ten years ago in the world of TV, music and advertising. With his company, Zinquin Audiovisual, he works as a director of production and of advertising videos, specialising in music, tourism and gastronomy, his great passions on the other side of the camera. He is currently busy on what will be his second documentary, El equilibrio de los opuestos, alongside chef Javier Olleros, with preparations underway on a third about the world of wine, Vidas and vides.
